Easy (but sooo good!) Molten Lava Cake
/FRIEENNDDSSS!!! Valentine’s Day is almost upon us, and if you are anything like me, planning went from “Ahh.. I’ve got plenty of time..” to “HOW ARE WE ALREADY HERE?!” in like, the blink of an eye. Or the blink of 20-ish long crazy days. Yeeahhh.. that’s prob more accurate.. ahaha. (kind of) Anyways!! DESSERT IS HERE! And if it’s the only ‘special’ thing you do for your Valentine’s Day dinner, trust me when I say it will be special enough on it’s own. I know this because that was me last year and it was a total hit!!! See- I’m always doing research for you guys. Ahaha! Without further ado (because we know you don’t.have.the.time. rn)- A tried + true molten lava cake that will make you look like you slaved.
Sidenote, though, because this is important if you have littles wanting to get in on the festivities.. this is TOTALLY kid friendly and actually what made me fall in love with this recipe. Your babes can stir and mix and feel super involved without making your cake go flat like a souffle most definitely would. My personal experience would recommend that you shy away from having a kiddo help you with a souffle (just sayin’), but not this. This is perfect for them. MOLTEN LAVA CAKE
A newfound family tradition after my girls and I surprised their daddy with this treat last Valentine’s Day.
So easy and made mostly with ingredients that you probably have on hand!
INGREDIENTS
Baking spray, for spraying cups
1/2 cup butter
2 ounces bittersweet chocolate
2 ounces semisweet chocolate
1 1/4 cups powdered sugar
2 whole eggs
3 egg yolks
1 teaspoon vanilla
1/2 cup all-purpose flour
Vanilla ice cream, for serving - or chocolate if you’re a nut like me.
PREPARATION
Preheat the oven to 425°. Spray four custard cups or ramekins with baking spray and place on a baking sheet.
Microwave the butter, bittersweet chocolate and semisweet chocolate in a large bowl on high until the butter is melted, about 1 minute. Whisk until the chocolate is also melted. Stir in the sugar until well blended. Whisk in the eggs and egg yolks, then add the vanilla. Stir in the flour. Divide the mixture among the cups.
Bake until the sides are firm and the centers are soft, about 13 minutes. Let stand 1 minute. Invert on individual plates while warm and serve with vanilla ice cream.
