watermelon, arugula & feta salad
I know, I know. Watermelon season ended like last week. So not cool of me to post this now. I hear you. But, I've made this salad twice in the past week for different parties and it was so easy and such a hit that I had to share. It's been one of my favorite salads for years now, so give it a whirl like, tomorrow. I promise you'll love it and it takes about three minutes flat to toss together. Major points for that!
Watermelon, arugula, & feta salad w/ balsamic glaze
ingredients
1 5-ounce package baby arugula
8 cups 3/4-inch cubes seedless watermelon
1 7-ounce package feta cheese, crumbled
2 tablespoons balsamic vinegar glaze
PREPARATION
1. Arrange arugula over large platter. Scatter watermelon, then feta over. Drizzle with balsamic glaze and sprinkle with pepper.
Ingredient tip:
Balsamic vinegar glaze can be found in the vinegar section at many supermarkets. I always grab the squeeze bottle option, if available, because it makes for those pretty lines. ;) If the premade glaze is unavailable, boil 3/4 cup balsamic vinegar in a small saucepan until reduced to 3 tablespoons, 6 to 7 minutes.
